I love pumpkin everything, and I love to bake. My schedule doesn't allow me much time to bake, so I usually bake extra and freeze it for later.
This pumpkin chocolate chip bread recipe makes three loaves, which seems like a lot. But they freeze really well, so I can put one in the freezer, eat one, and give one away.
Since I'm only cooking once for three loaves, it doesn't bother me that there are so many ingredients in this recipe. It is a more complex recipe than I usually make, but the ingredients work so well together.
You can also use this pumpkin chocolate chip recipe to make muffins or mini loaves. You may need to adjust the time for those, so keep an eye on them while they cook.
If you've never had a pumpkin chocolate chip recipe, then you're missing out. My kids turned up their collective noses the first time I made this, but chocolate and pumpkin really do come together for this moist pumpkin bread recipe.
Pumpkin Chocolate Chip Bread Recipe
This pumpkin chocolate chip bread recipe probably isn't the healthiest recipe. If you're looking for a flourless pumpkin bread recipe, check out this one.
That doesn't mean that you can't make this recipe a little healthier. I cook a lot, so I'm pretty comfortable making substitutions and they usually come out pretty tasty.
I almost always use applesauce in place of oil in quick bread recipes. This is already a moist pumpkin bread recipe, but if you use applesauce it will be similar to a cake in texture.
I also use some coconut sugar in place of the sugar. I don't use it for all three cups, but you probably could.
You can also use half white whole wheat flour for the all purpose flour in this pumpkin chocolate chip recipe. Whole wheat would also work for 1/4 to 1/2 of the flour without changing the texture too much.
If you want to make mini pumpkin chocolate chip bread loaves, bake for 35 minutes and check them every few minutes to make sure they don't overcook.
