Is there anything better than a blueberry muffin fresh from the oven? We love blueberry muffins, and Caleb especially loves them.
Caleb is my math kid. When he was a preschooler, I would teach him math by cooking. We got to hang out together, he learned a life skill in cooking, he was learning science, and he learned about fractions and how to double whole numbers and fractions if we doubled a recipe.
And of course, we got a yummy treat at the end. If there are blueberry muffins involved, who wouldn't want to learn math and science?
One summer, I gathered several blueberry muffin recipes and we made all of them and took careful notes to find the absolute best blueberry muffin recipe in existence. It's been almost 10 years now, and we will use that recipe.
He's 13 now, and he doesn't like to cook or bake. It's a life skill that he needs to learn because mom isn't going to collage with him. He may never enjoy cooking, but he will learn how to cook basic meals before he moves out.
This blueberry mug cake recipe is perfect for him. It's easy to make, and he can make it in under 10 minutes from start to finish.
Blueberry Mug Cake Recipe
This blueberry mug cake recipe is the perfect microwave desserts recipe. Since it has ricotta cheese in it, it has a little more protein than a regular cake.
While I wouldn't call this a healthy recipe, it does have ricotta for extra protein and honey or maple syrup for the sweetener. I'd call this a better for you choice than eating a regular muffin or piece of cake.
This isn't just for dessert; make it as a snack or even breakfast.
Want to get really crazy? Use different berries. Add raspberries, blackberries, or even a mix of all three.
This blueberry mug cake recipe is already easy, but to make it easier you can create a mug cake mix. Mix the dry ingredients together and add the wet ingredients when you want to make it.
You can also freeze the blueberries until you're ready to make this recipe.

- 1/4 cup ricotta cheese
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 3 tablespoons honey or maple syrup
- 1 egg
- 1/4 cup flour
- 1/4 teaspoon baking powder
- Pinch of salt
- 1/3 cup blueberries
- Powdered sugar for dusting (optional)
