There are few things that all five of us will eat, but banana bread is one of them. The kids will all eat bananas, so I get them often for their snacks or even as a side dish for dinner.
When bananas start to turn brown, I turn them into banana bread. This one bowl basic banana bread recipe is our go to recipe. It's so easy, the kids can even make it themselves.
This quick bread freezes well, so I'll buy over ripe bananas cheap and make two or more batches to keep in the freezer.
This recipe tastes amazing on its own, or you can make a quick change by adding nuts or even chocolate chips. My kids like chocolate chip banana bread. We like to use mini chocolate chips so each bite has chocolatey goodness.
One Bowl Basic Banana Bread Recipe
This recipe makes one loaf. Feel free to double or even triple the recipe to make more. This freezes well, so I double it if I have enough bananas.
Why Do You Use Ripe Bananas?
Although you don't have to use ripe bananas, I highly recommend it. Ripe bananas are softer, so they are easier to mash.
Ripe bananas are also sweeter and more flavorful, which makes this one bowl basic banana bread taste sweeter and more flavorful.
I've used bananas that are almost all black on the outside. They are too soft to eat, but they are perfect for making bread. Just be sure to cut off any brown spots before using.
If you only have one overly ripe banana, stick in the freezer. When you get two more ripe bananas, make a loaf of bread.
How to Freeze Banana Bread
Banana bread freezes very well. Let it cool completely then place in a freezer bag or wrap with freezer paper. You can also wrap it in plastic wrap and then foil or in plastic wrap and place in a freezer bag.
To thaw, unwrap the bread and place on the counter or on a wire rack. Let thaw for three to four hours.
If you want smaller servings, cut the bread into slices. Wrap the slices with plastic wrap and then place in an airtight container or freezer bag.
Remove frozen slices and unwrap. Thaw for one to two hours at room temperature.
Banana bread will last in the freezer for two to three months. After that, it might change texture, but it will be safe to eat for a few more months.
If you freeze slices, they will lose their texture sooner than a loaf.

How to Mash Bananas
I use a potato masher to mash my bananas, but you can also use a hand mixer. The hand mixer does a better job, especially if you are mashing a lot of bananas.
Banana Bread Additives
This one bowl basic banana bread recipe is a classic recipe that is delicious on its own. However, you can still add a few things to change up the recipe.
Try adding one of the following to change things up:
- blueberries
- chocolate chips
- butterscotch chips
- caramel chips
- pecans
- walnuts
- raisins
- dried cranberries
- dried plums
- dried apricots
- diced pears
- cherries
- fresh strawberries
- shredded coconut
You can use fresh or dried fruits. If you do use fruits, chip them into 1/4 inch pieces before adding them.

- 3 large ripe bananas
- 3 Tablespoons butter
- ¾ cup sugar
- 1 ½ cups flour
- 1 teaspoon baking soda
- 1/2 cup chipped nuts, chips, or fruit (optional)

Preheat oven to 350F. Grease a loaf pan and set aside.

In a large bowl mash bananas with a fork or potato masher.

Bake for 50-60 minutes. Test that the bread is done by sticking a toothpick or skewer into the center of the loaf. If it comes out clean the bread is done.
