Easy French Toast Casserole Recipe

How to make an easy French toast casserole.  This can be made the night before and makes a great make ahead breakfast for a family or for a crowd. 


This easy French toast casserole recipe makes a delicious breakfast, brunch, or even breakfast for dinner.  My kids love it when we have breakfast for dinner. 


At one point, we had over 40 chickens.  We were getting about 30 eggs a day, and we just couldn't eat them all.


This French toast bake is a great way to use up a lot of eggs.  


This is also a good way to use up leftover bread.  I actually used hot dog buns to make it for this blog post!  I'll also give you some other bread ideas and mix ins to make a new family favorite.


Easy French Toast Casserole Recipe


This is my Christmas, Thanksgiving, and Easter breakfast go to.  I love that I can make it the night before, so there's one less thing to worry about the morning of a holiday. 


By cooking the butter and brown sugar together, it creates a sort of caramel on the bottom of the casserole.


I don't even bother to add syrup when I eat it, but the kids add a little bit.  This is plenty sweet and has tons of flavor without any butter or syrup.


What Goes With French Toast Casserole?


I usually serve a large pan of scrambled eggs, toast, bacon or sausage, and some fresh fruit.  When we had a lot of extra eggs, I would make this and an egg casserole with ham and veggies.

This easy French toast casserole tastes amazing on its own, but you can also add one or more of the following:

  • Blueberries
  • Diced apples
  • Raisins
  • Chopped nuts
  • Dried coconut
  • Maple syrup
  • Whipped cream
  • Hazelnut spread


Best Bread for French Toast Casserole


Unlike traditional French toast, you have a lot of options for your bread choice.  I've made this with French bread, white sandwich bread, hot dog buns, ciabatta, or sourdough bread.  


You know how your kids leave 1 slice of bread in the bag and open a new bag and then that single slice gets dry?  Just my kids?


Anyway, when you do get random pieces of bread or you didn't eat a loaf quick enough, stick it in the freezer and keep adding to it.  When you want to make this, let it thaw for about an hour so it's easier to tear.  


I've mixed breads using buns and white bread.  It's all good.  


Easy French Toast Casserole Ingredients

  • 1 cup brown sugar
  • 1/2 cup real butter
  • 8 ounces bread
  • 2 cups milk
  • 6 eggs
  • 2 teaspoons vanilla extract 
  • 1 teaspoon ground cinnamon

Easy French Toast Casserole Directions


Step #1


Grease a 9x13 pan.  


Step #2


Melt the butter over medium low heat in a saucepan.  Add 1 cup brown sugar and stir until dissolved.  Pour into the greased pan.

Step #3


Tear bread into 2 inch cubes.  Place in pan evenly about 2 inches thick.

Step #4


Beat eggs, milk, and vanilla extract in a bowl.  Pour over the bread.  Use a spoon or your fingers to ensure that all of the bread is coated evenly.    Sprinkle cinnamon on top.

Step #5


Cover and place in the fridge for several hours.  You can also leave it in the fridge overnight.


Step #6


Bake at 450 degrees F for 15 minutes.  Reduce heat to 350 F and bake an additional 30 minutes.  

 Yum!  This is a quick and easy French toast casserole recipe, and it's perfect for Christmas or Easter morning.
