Zucchini season is upon us. This is the time when you may wake up to find a pile of zucchini on your porch because your neighbors are so desperate to get rid of it.

We don't usually do this for dinner. Instead, we have it as an afternoon snack. Sometimes I make them as a side dish when we have fried zucchini because the kids don't like fried zucchini.
These are easy to customize too. You can use bigger slices and add more toppings like mushrooms or green peppers.

When to Pick Zucchini
Zucchini is ready to harvest about 45 to 55 days after you plant. You'll notice some blooms. Zucchini likes to hide under the big leaves, so be sure to look down close to the ground for ripe ones.
Zucchini is the most tender and has the most flavor when it's about 6 inches long, so try to pick it then.
If you do find one that got away, you can still use it. I usually use the larger ones for zucchini bread after I cut out the seeds.
You can also use these to make zucchini boats.
After you pick your zucchini, store in the fridge for a few days until you're ready to use them.

To make these in the air fryer, place them on a grilling mat or lightly greased foil. Bake at 360 degrees F for 2 to 3 minutes.
