I don’t understand why you cannot can chia seed jam because you say it does not have enough acid. Doesn’t the acid come from the berries and the lemon. Is this scientifically proven that it can’t be waterbathed in a canner? There are seeds in berries.
ReplyDeleteYou are correct. The only reason I don't recommend canning is because I don't know for 100% certain that it is safe. Personally, I don't believe in rebel canning and can't promote it. Your kitchen your rules, but I don't can unless I know it's safe.
