I can bake a yummy cheesecake, but I always have problems with it cracking. This mini apple cheesecake recipe is baked in a muffin tin, so there's less of a chance that it will crack.
I also like that I can set these on a table in the cupcake wrapper, so they are easy to serve. You can also make them in a mini muffin tin for bite sized mini cheesecake apple crisp.

How to Store Leftover Apple Crisp Mini Cheesecakes
You can store leftover apple cheesecake bites in the fridge for up to 7 days. Store them in an airtight container.
You can also wrap the apple crisp cheesecake bites individually in plastic wrap and then place in a freezer bag. Freeze for up to 6 months.
When you're ready to eat one or a few, place them in the fridge to thaw overnight. Do not use the microwave to thaw.

I love this mini apple pie cheesecake recipe as is, but there are some variations that you can make to make it your own.

Even though this mini apple pie cheesecake recipe is made from scratch, it still uses common panty staples. The amounts for each ingredient are listed below in the recipe card.
Graham cracker crumbs - You can start with graham cracker crumbs or place graham crackers in a food processor and mix until they are a crumbs.
Sugar - You can use monk fruit, Splenda for baking, or your choice of sweetener.
Cinnamon - I always recommend using a high quality cinnamon. You can buy it on Etsy in bulk.
Melted butter - Use real butter and not margarine.
Cream cheese - Use blocks of cream cheese and not a spread. Use full fat or low fat, but no fat won't turn out well.

Flour - All purpose flour is fine.

How to Make Mini Apple Cheesecake Bites
